Working principle of puff extruder
Puffing means that the volume will increase. Puffed food specifically refers to food that uses frying, extrusion, sand frying, baking, microwave and other technologies as a cooking process. Before and after the cooking process, the volume increases significantly. It became popular in the 1960s. The grain will first be placed in the puffer for heating and pressurization. During this process, the water in the grain will be overheated. When the pressure in the extruder snack reaches a certain value, the pressure of the puffer is turned on and the pressure changes from high pressure to normal pressure instantly. The overheated water molecules vaporize instantly, and the water molecules can expand 2000 times. The molecular structure of the grain is also destroyed, and the insoluble long-chain starch is shortened into water-soluble short-chain starch, dextrin and sugar.
Types of puffed food
1. Fried type, It is a puffed food fried in edible oil.
2. Baked type, which is a food puffed by baking, frying or microwave heating.
3. Direct extrusion type, which is a food that uses pressure difference to directly expand the raw materials.
4. Color type, which uses the above three as the original embryo, and adds nuts, oils and other processed foods.
